Ingredientes para cuatro personas:

-         Cinco hojas de gelatina

-         Tres yemas de huevo

-         100 gramos de azúcar

-         Un cuarto de litro de nata líquida

-         Una cucharada de café molido

-         100 gramos de avellanas tostadas

-         100 gramos de nata montada sin azúcar

 

Preparación:

En primer lugar, lo que debemos hacer, es poner agua fría en un bol grande  y dejamos en remojo las hojas de gelatina durante unos cinco minutos más o menos, mientras pasa este tiempo, aprovechamos para batir las yemas y el azúcar hasta conseguir una crema blanquecina.

A continuación, mezclamos en un cazo, la nata líquida y el café molido y lo calentamos todo junto. Cuando empiece a hervir, añadimos la gelatina bien escurrida y retiramos el cazo del fuego, para luego, remover bien hasta que nos quede una pasta homogénea.

Después de haber dejado enfriar un poco la preparación, le agregamos la crema anterior, las avellanas picadas y la nata montada. Mezclamos bien todos los ingredientes y vertemos la pasta en un molde en forma de corona. Introducimos en la nevera durante unas ocho horas más o menos, tras las cuales pasamos a desmoldar la bavaroise.

Si no la servimos de inmediato la dejaremos en el frigorífico, pues se sirve siempre fría.

 

Truco:

Para desmoldar con éxito, es aconsejable introducir el molde en agua muy caliente durante unos segundos. De esta forma, facilitamos el desprendimiento de la base y las paredes del pastel.
