Ingredientes:

-900 g de menestra de verduras congelada.

-2 pizcas de sal.

-200 g de jamón york.

-100 g de queso emmental.

-4 tomates medianos.

-100 g de mayonesa.

-1/2 cucharadita de sal.

-1/2 cucharadita de pimienta blanca recién molida.

-2 cucharaditas de pimentón dulce.

-Unas ramitas de cebollino.

-Perejil picado.

Preparación:

Hierva las verduras congeladas según las instrucciones. es aconsejable hervirlas con poca agua. Échelas cuando ésta, ya salada, hierva a borbotones, baje el fuego y déjelas cocer tapadas hasta que estén al dente, es decir, algo crujientes.

Corte las lonchas de jamón, que deben ser algo gruesas, en daditos.

Corte el queso en daditos del mismo tamaño.

Pele los tomates. Para ello, practíqueles una incisión en forma de cruz en el extremo redondo, escáldelos un par de minutos en agua hirviendo, refrésquelos y pélelos. Córtelos en rodajas y luego en tiras, eliminando, si hace falta, las semillas y la punta verde.

Escurra las verduras y déjelas enfriar. Reserve un poco del agua de cocción.

Mezcle la mayonesa con la cantidad de agua de cocción de las verduras necesaria para obtener una salsa cremosa y ligera.

En una ensaladera, mezcle las verduras, el tomate y los daditos de jamón y queso con la sal, la pimienta y el pimentón.

Vierta por encima la salsa mayonesa, espolvoréela con una pizca de pimentón y con el cebollino o el perejil picado.
