Ingredientes:

-1 pimiento verde.

-1/2 diente de ajo.

-2 tomates.

-1/2 pepino.

-1/2 cucharadita de sal.

-2 cucharadas de zumo de limón.

-4 cucharadas de aceite.

-1/2 cucharadita de azúcar.

-50 gramos de aceitunas negras.

-150 g de queso de oveja fresco.

-1 pizca de orégano.

-Albahaca fresca para adornar.

Preparación:

Pelamos el diente de ajo y frotamos con él una ensaladera.

Cortamos el pimiento por la mitad y quitamos las semillas y las membranas. Los lavamos y secamos, cortándolos después.

Pelamos la cebolla y la cortamos en aros.

Lavamos y secamos el pepino, lo cortamos en dados grandes.

Lavamos y secamos los tomates, quitamos los pedúnculos y cortamos en trozos pequeños.

Batimos en la ensaladera el zumo del limón con la sal y el azúcar, añadimos el aceite.

Ponemos los trozos de pimiento, pepino, tomate y la cebolla en la ensaladera, mezclamos.

Cortamos el queso fresco en dados, espolvoreamos con el orégano y lo agregamos a la ensaladera con las aceitunas.

Tapamos la ensaladera y dejamos reposar durante 20 minutos.

Lavamos y secamos la albahaca, eliminamos los tallos y cortamos las hojitas en tiras.

Para servirla, espolvoreamos con la albahaca.
