Ingredientes:

-1 lechuga pequeña.

-2 endibias rojas de Verona.

-2 manojos de perifollo.

-4 hojitas de borraja o verdolaga fresca.

-2 dientes de ajo.

-La corteza de dos rebanadas de pan integral.

-2 huevos duros.

-2 cucharadas de vinagre de frutas.

-1 cucharadita de mostaza fuerte.

-1/2 cucharadita de sal.

-Pimienta negra recién molida.

-5 cucharadas de aceite de oliva.

Preparación:

Separe las hojas de la lechuga y las endibias. Elimine la parte más dura del tronco y lave las hojas bajo el grifo. Déjelas escurrir y séquelas cuidadosamente con un lienzo. Córtelas en trozos.

Lave el perifollo y las hojitas de borraja o verdolaga bajo el grifo y séquelas con un lienzo.

Pique groseramente las hierbas con un cuchillo o la media luna y mézclelas con la lechuga y las endibias en una ensaladera.

Pele los diente de ajo. Parta uno por la mitad y frote con él las cortezas de pan. Pique todo el ajo bien fino.

Con un cuchillo de sierra o bien afilado, corte las cortezas en daditos y añádalas a la ensalada con el ajo picado.

Pele los huevos duros y píquelos.

Mezcle el vinagre, la mostaza, la sal y la pimienta en un cuenco, añada el aceite y remueva bien. Aliñe la ensalada con esta vinagreta.

Sirva la ensalada decorada con el huevo duro picado.
