Ingredientes:

-2 Tazas de harina
-2 Huevos
-1/2 taza de azúcar
-50 grs de mantequilla
-500 grs dulce de membrillo
-4 Cucharadas de agua

Preparación:

Colocamos el harina y el azúcar en un bol bien seco, agregamos la mantequilla, preferiblemente blanda pero no derretida, cortada en pequeños trozos. Mezclamos estos ingredientes hasta que quede una pasta como "arenilla".
Agregamos los huevos uno a uno y mezclamos con una cuchara de madera. De esta forma vamos obteniendo un bollo uniforme. Una vez integrados bien los ingredientes, dejamos reposar en la nevera unos 20 minutos.
Mientras podemos preparar el relleno. Colamos en un cazo el agua y añadimos el dulce de membrillo cortado en pequeños cubos. Llevamos a fuego lento y con un tenedor pisamos para mezclar el dulce y el agua hasta obtener una consistencia similar a una mermelada. Retiramos.
Sobre la encimera colocamos un poco de harina para poder amasar. Retiramos la masa de la nevera, separamos un poco más de la mitad de la preparación y amasamos, si fuera necesario agregamos un poco más de harina para que no se pegue. Cogemos un molde tipo pizzero de unos 30cm de diámetro y lo enmantecamos y enharinamos. Estiramos en forma de círculo la masa para poder cubrir el molde. Cortamos el excedente. Llenamos con el dulce de membrillo. Con el resto de la masa, la estiramos y cortamos cintas de 1 cm aproximadamente y las colocamos sobre el dulce formando una red (como queda en la foto)
Llevamos a horno a 180º unos 25 minutos hasta que tomen un color tostado. Dejar enfriar bien y servir.

Consejo:

Al retirar la Pasta Frola del horno, podemos espolvorear con coco rallado, dará un toque más elegante y un gusto especial.
