Ingredientes (4 personas):

-6 huevos.

-3 patatas medianas.

-1 cebolla.

-1 lata de atún.

-1 pimiento rojo.

-1 berenjena.

-Sal.

-Aceite de oliva.

-Salsa de tomate.

Preparación:

Pelar las patatas y cortarlas en rodajitas finas. Poner una sartén al fuego con aceite suficiente para freír las patatas. Agregar las patatas a la sartén cuando el aceite esté un poco caliente y freírlas a fuego medio.

Cuando las patatas estén casi hechas, incorporar la cebolla cortada finamente, salar y dejar que se termine de hacer el conjunto.

Escurrir de aceite y reservar.

Limpiar los pimientos y las berenjenas y cortarlos en daditos. Freír las dos hortalizas en una sartén con aceite. Después, salarlas y escurrir del aceite.

Batir dos huevos con una pizca de sal y mezclarlos con las patatas y cebolla. Calentar un poco de aceite en una sartén antiadherente, verter la mezcla y preparar una tortilla redonda. Batir dos huevos más, mezclarlos con el atún escurrido y cocer otra tortilla. Hacer lo mismo con los pimientos y berenjenas.

Para montar el pastel, poner un poco de salsa de tomate en la base de un plato, colocar encima la tortilla de patatas, untarla con un poco de salsa, cubrir con la tortilla de atún, untarla también con salsa de tomate y terminar con la tortilla de hortalizas. Servir el pastel de tortillas frío.
