Ingredientes para cuatro personas:

 

-         150 gramos de pasas de corinto

-         Una copita de ron blanco

-         100 gramos de chocolate

-         125 gramos de mantequilla

-         125 gramos de azúcar

-         Tres huevos

-         75 gramos de almendras troceadas

-         100 gramos de almendras molidas

-         Dos cucharaditas de levadura

-         Una ramita de vainilla

-         Un poco de sal

-         125 gramos de harina

-         50 gramos de harina de maíz

 

Preparación:

 

Poner las masas en maceración con el ron durante 12 horas. Precalentar el horno a 150º C. Untar un molde de corona con mantequilla y espolvorearlo con harina.

Batir la mantequilla con el azúcar hasta que quede cremosa, agregar los huevos, uno a uno, batiendo por espacio de un minuto antes de poner el segundo.

Cuando estén incorporados todos los huevos, seguir batiendo durante cinco minutos más.

Añadir la vainilla, la sal, las pasas junto con el licor, el chocolate, las almendras molidas, las harinas y las levaduras tamizadas y mezclar todo con una espátula.

Colocar en el fondo del molde las almendras molidas, las harinas y la levadura tamizadas y mezclar todo con una espátula.

Colocar en el fondo del molde las almendras troceadas, y a continuación verter la masa. Introducir en el horno y dejar cocer durante una hora y dejar cocer durante una hora y cuarto, aproximadamente. Desmoldar cuando esté frío.
