Ingredientes (4 personas):

-8 tomates maduros.

-250 gramos de salmón ahumado en lonchas.

-6 cucharadas de aceite de oliva.

-2 dientes de ajo.

-1 lata de maíz desgranado.

-2 cucharadas de pan rallado.

-1/2 cucharadita de eneldo seco.

-4 ramas de perejil.

-2 cucharadas de vinagre de jerez.

-Pimienta.

-Sal.

Preparación:

Precalentar el horno a 180º. Pelar los dientes de ajo y picarlos.

Lavar y secar los tomates. Cortarlos por la mitad. Ponerlos en una fuente refractaria con la parte cortada hacia arriba y condimentarlos con sal, pimienta y eneldo seco. Hornearlos durante unos 5 ó 6 minutos, apagar el horno y encender el grill.

Recubrir los tomates con el ajo y el perejil picados. Espolvorearlos con el pan rallado. Rociarlos con la mitad del aceite de oliva y cocerlos bajo el grill durante unos 5 minutos.

Mientras tanto, enrollar las lonchas de salmón ahumado y poner los rollitos en una fuente.

Abrir la lata de maíz y escurrir los granos. Ponerlos en una ensaladera y aliñarlos con una vinagreta elaborada con vinagre de jerez, el aceite de oliva restante, pimienta y sal.

Retirar los tomates del horno y ponerlos junto a los rollitos de jamón. Servir enseguida junto con la ensalada de maíz.
