Ingredientes para cuatro personas:

-         Dos cebollas grandes

-         Dos dientes de ajo

-         Un litro de consomé de carne

-         100 gramos de queso manchego rallado

-         Media barra de pan de queso del día anterior

-         Cuatro huevos

-         Un vasito de vino blanco seco

-         Aceite de oliva virgen

-         Sal

-         Pimienta

 

Preparación:

Pela, lava y corta las cebollas en julianas y póchalas a fuego lento en una cazuela con un fondo de aceite. A los doce minutos, añade los ajos pelados y laminados. Cuando se doren, vierte el vino, deja evaporar y añade el consomé caliente y salpimenta. Cuece a fuego medio- bajo durante veinte minutos.

Corta el pan en rodajas y engrásalas por ambas caras con un poco de aceite. Tuéstalas por los dos lados y añádelas a la sopa a los 20 minutos de cocción.

Hecha la sopa, espolvorea con el queso y métela al horno un par de minutos a 180º C. sácala y sírvela muy caliente, con los huevos recién escalfados ( hazlos durante tres o cuatros minutos en un par de litros de agua con medio vaso de vinagre.
