Ingredientes (para 4 personas):

-75 gramos de azúcar.

-175 ml de agua.

-1 limón.

-1 clara de huevo.

-175 ml de cava de buena calidad.

Preparación:

Calentamos ligeramente el agua en un cazo, añadimos el azúcar y removemos para que se disuelva bien. Dejamos enfriar.

Mezclamos el almíbar preparado con el zumo del limón colado y congelamos en una fuente metálica grande. Cada 30 minutos, aproximadamente, rompemos con un tenedor los cristales del hielo que se formen en los bordes del sorbete y mezclamos la preparación. Cuando el sorbete esté congelado casi por completo, agregamos la clara montada a punto de nieve y mezclamos delicadamente. Volvemos a congelar hasta el momento de su utilización (mejor si no es mucho tiempo porque se pondría muy duro y sería difícil añadir el cava).

Unos 10 minutos antes de servir, agregamos el cava y mezclamos para que quede homogéneo y cremoso. Servimos rápidamente.

Consejos:

Una presentación espectacular consiste en servir el sorbete en las copas sin haberle mezclado el cava, presentarlas a los invitados y completar con el cava al momento para que ellos mismos lo mezclen.

Resulta ideal después de asados contundentes y comidas pesadas.

Se puede preparar mucho más rápidamente utilizando sorbete de limón ya preparado, sólo hará falta agregar el cava.
