-6 huevos
-2 calabacines
-40grs de queso rallado parmesano
-40grs de queso rallado Grouyere
-1 cucharadita de jugo de limón
-3 cucharadas de aceite de oliva
-2 cucharadas de perejil picado
-1 cucharada de cebollino picado
-50grs de mantequilla
-40grs de harina
-medio litro de leche
-sal y pimienta

Preparación

Cortar los calabacines limpios en rodajas finas y saltearlos en una sartén con el aceite de oliva, dorarlas por ambos lados, siempre controlándolas que no se peguen o quemen. Cuando estén tiernas retirar.
Derretir la mantequilla en una cacerola. A parte, calentar la leche. Agregar la harina a la mantequilla mezclando constantemente y luego incorporar la leche bien caliente siempre mezclando para obtener la salsa bechamel.
Montar solo las claras de los huevos a punto de nieve con el limón y reservar las yemas.
Mezclar en un bol los calabacines con la salsa, incorporar los quesos, el perejil, el cebollino y las yemas, condimentar con sal y pimienta. Luego añadir las claras montadas y mezclar todos los ingredientes suavemente.
Preparar un molde para soufflé untado con mantequilla y verter la preparación. Hornear unos 20 minutos a 180º, luego aumentar la temperatura a 220º y cocinar unos 15 minutos más. Retirar y servir enseguida.
