Ingredientes (4 personas):

-1 lámina de pasta brisa.

-1 calabacín.

-1 pimiento rojo.

-1 pimiento amarillo.

-1 berenjena.

-1 cucharada de miel.

-3 cucharadas de aceite de oliva.

-1 cucharada de vinagre.

-2 cucharadas de almendras laminadas.

-1 ramita de romero.

-Sal.

-Pimienta.

Preparación:

Despuntar la berenjena y el calabacín; retirar el rabito de los pimientos y las semillas y los filamentos blancos del interior. Lavar todas las hortalizas y cortarlas en dados. Introducirlas en una sartén grande o en un wok con el aceite caliente, añadir las almendras y saltearlo todo durante 5 minutos. Salpimentar. Agregar la miel y el vinagre, remover y continuar la cocción 5 minutos más.

Forrar un molde redondo o alargado con la pasta brisa, pinchar el fondo con un tenedor, revestirlo con papel de aluminio y distribuir encima un puñado de legumbres secas. Introducirlo en el horno, precalentado a 180º, y cocer durante 10 minutos. Retirar el papel de aluminio y las legumbres y seguir cociendo en el horno unos 5 minutos más, hasta que la tarta empiece a tener un color dorado.

Rellenar la tarta con las verduras, decorar con unas hojitas de romero y servir.

También sería una buena opción preparar un pisto o cualquier otra mezcla de verduras salteadas y servirlo en tartaletas individuales. Es importante rellenar la tarta en el último momento para evitar que la humedad de las verduras reblandezca la masa.
