Ingredientes (4 personas):

-8 huevos.

-3 patatas.

-400 gramos de espinacas congeladas.

-1 cebolla.

-2 cucharadas de queso rallado.

-2 vasos de tomate triturado.

-1 puerro.

-1 cucharadita de tomillo.

-Una pizca de nuez moscada.

-7 cucharadas de aceite de oliva.

-Sal.

Preparación:

Pelar las patatas y cortarlas en dados. Introducir las espinacas aún congeladas en una cacerola con abundante agua salada y cocerlas durante 8-10 minutos. Escurrirlas muy bien, presionando con las manos, y picarlas finamente.

Sofreír la cebolla picada con 4 cucharada de aceite en una sartén, añadir las patatas y cocerlas, a fuego bajo, hasta que estén tiernas. Agregar las espinacas picadas, subir el fuego y continuar la cocción durante 5 minutos más. Aromatizar con una pizca de nuez moscada y rectificar de sal.

Batir los huevos con el queso rallado en un bol, añadir las verduras y mezclar bien. Verter la mezcla en una sartén antiadherente untada con aceite y dejar que cuaje por un lado. Darle la vuelta y cuajar la tortilla por el otro lado. Retirarla, dejar que se enfríe y cortarla en dados.

Limpiar el puerro y trocearlo. Sofreírlo en una sartén con el aceite restante, incorporar el tomate triturado y el tomillo y cocer durante 15 minutos. Agregar los dados de tortilla, calentar unos instantes y servir.
