Ingredientes (4 personas):

-4 huevos.

-4 fondos de alcachofa.

-300 gramos de espárragos verdes.

-150 gramos de guisantes frescos.

-1 pimiento rojo.

-1 ramito de perejil.

-1 cebolla roja.

-Harina.

-Leche.

-Aceite de oliva virgen extra.

-Sal.

-Pimienta.

Preparación:

Cueza por separado en agua con sal los fondos de alcachofa, los espárragos y los guisantes.

Déjelos escurrir y cuando estén cocidos, corte los fondos en trozos pequeños así como la parte verde de los espárragos.

Ase el pimiento al horno. cuando se haya ennegrecido, frótelo con un trapo para retirar la piel. A continuación, elimine los filamentos y el pedúnculo, y córtelo en lonchas.
