Ingredientes (4 personas):

-4 zanahorias.

-2 nabos.

-400 gramos de calabacines.

-100 gramos de tirabeques.

-200 gramos de champiñones.

-1 cebolla.

-1/2 vaso de nata líquida.

-1 cucharada de mantequilla.

-1 pastilla de caldo de ave.

-2 cucharadas de perejil picado.

-Sal.

-Pimienta.

Preparación:

Pelar las zanahorias y los nabos y cortarlos en rodajas. Colocarlos en un cesto de cocción al vapor sobre una olla con agua hirviendo. Cocerlos al vapor durante 6 minutos. Salar ligeramente y reservar.

Despuntar los calabacines, lavarlos y cortarlos en rodajas. Cocerlos durante 4 minutos al vapor junto con los tirabeques.

Pelar la cebolla y rallarla muy fina. Derretir la mantequilla en una cacerola, añadir la cebolla y rehogarla durante 5 minutos a fuego lento. Espolvorear por encima la pastilla de caldo bien desmenuzada, verter la nata líquida y calentar, a fuego lento, sin que llegue a hervir.

Eliminar el pie terroso de los champiñones, limpiarlos con un paño humedecido y cortarlos en láminas. Disponerlos junto con las hortalizas cocidas al vapor en un plato, espolvorear con una pizca de pimienta y el perejil picado y regar con la salsa preparada.

Se pueden utilizar, si se prefiere, otras verduras como judías verdes o coliflor, pero para que el plato tenga un efecto decorativo, es importante contrastar verduras de diferentes colores. La salsa también admite múltiples variaciones: con anchoas, gambas, roquefort…
